Japanese carrot-ginger dressing


Jäätävää New York matkakuumetta potiessani tein taas pitkästä aikaa tätä super helppoa salaattikastiketta. “Löysin” kastikkeen alunperin Nycin matkoilla, jossa sitä tarjoillaan poikkeuksetta lähes jokaisessa sushipaikassa alkusalaatin kanssa. Ostin pitkään kastiketta mukaan aina Agata & Valentina kaupasta, koska en ollut vielä törmännyt siihen täällä. Tajusin kuitenkin lopulta että tätä kastiketta on tosi helppo tehdä itsekin, joten enää ei tarvitse odotella Nycin matkoja tämän takia.

Ajattelin jakaa reseptin täällä jos siellä sattuu olemaan joku muukin joka on tykästynyt tähän kastikkeeseen. Pirteän värinen kastike sopii ihan sellaisenaan perus vihreän salaatin kanssa mutta voi sitä käyttää vaikka kasviksien dippailuunkin. Teen aina kerralla vähän isomman satsin sillä kastike säilyy hyvin jääkaapissa useamman viikon.

  • 3-4 porkkanaa
  • 4cm pala tuoretta inkivääriä
  • 2 salottisipulia
  • 1/4 cup riisiviinietikkaa
  • 1 rkl soijakastiketta
  • 2 rkl paahdettua seesaminsiemenöljyä
  • 2rkl vettä
  • 1/2 cup viinirypäleöljyä (myös muu neutraalin makuinen öljy käy esim. oliivi- tai maapähkinäöljy)
  • hunajaa
  • himalayan suolaa
  1. Laita kaikki ainekset öljyä lukuun ottamatta tehosekoittimeen ja sekoita sileäksi.
  2. Lisää öljy vähitellen ja anna tehosekoittimen käydä kunnes kastike on yhtenäistä.
  3. Mausta suolalla ja lisää tarvittaessa lisää hunajaa makeuttamaan.

I’ve been really longing to go back to New York lately. To ease my NY fever I made this carrot-ginger salad dressing they often serve at Japanese restaurants with the starter salad. Still haven’t found this type of dressing in France, so I make my own. The dressing is super easy to make, doesn’t require a lot of ingredients and comes together in just a few minutes. I usually make a large batch since it keeps quite well in the fridge. It’s the perfect pop of  “Hermès orange”-color to your green salad!

Japanese Carrot-Ginger dressing

Ingredients
  • 3-4 carrots
  • 4cm piece of fresh ginger
  • 2 shallots
  • ¼ cup rice vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons toasted sesame seed oil
  • 2 tablespoons water
  • ½ cup grapeseed oil
  • honey
  • himalayan salt
Instructions
  1. Add everything except the grapeseed oil into a blender and process until smooth.
  2. Add the oil and blend until well combined.
  3. Season with salt and add more honey if you like it sweeter.
