Japanese Carrot-Ginger dressing

- 3-4 carrots
- 4cm piece of fresh ginger
- 2 shallots
- ¼ cup rice vinegar
- 1 tablespoon soy sauce
- 2 tablespoons toasted sesame seed oil
- 2 tablespoons water
- ½ cup grapeseed oil
- honey
- himalayan salt
- Add everything except the grapeseed oil into a blender and process until smooth.
- Add the oil and blend until well combined.
- Season with salt and add more honey if you like it sweeter.
